Here's the first intro to my side kick, my boy, Angry Salsa. Its summer time, its hot, its miserable, you're hungry... you're HANGRY! You're even more ticked off that your girl got you doing some damn keto diet. I want something cool and refreshing, tired of meat and cheese.
How about some salsa, some avocado, some pistachios and some lime-sprinkled homemade low-carb tortilla chips? Its perfect, nice and cold and refreshing yet still hot and spicy! I don't know if you've ever done keto, but I find there is a lack of crunchy snacks and if your snackster like I am, I love me some chips, crackers, pretzels, fried... anything. None of these are keto friendly and most of those specialty fufu keto chips and crap like that all taste nasty. Solution: air fried low carb tortilla chips. They taste pretty damn good and lets face it, nothing like a fresh warm tortilla chip. Take yourself 2 low-carb tortillas, any type you want (I used the green spinach ones). Stack em up and using a pizza cutter, cut into 6 wedges (thats 3 even cuts for those of you that are geometrically ignorant). Take these and spread evenly in your air fryer, set at around 400 degrees for about 5 to 7 mins, depending on how
chewy or crunchy you want them. I like mine just a tad chewy but still some crunch. If you don't have an air fryer, oven works fine too, just takes longer. Once they're ready, dump em onto a plate or cookie sheet and squeeze some fresh lime over them. That's it. If you wanna get creative, you can experiment with brushing melted butter, olive oil, or coconut oil onto them first.
Now what to go with these fresh warm chips? Dip. We need a nice chunky dip for big scoops. Grab yourself a nice firm, chilled avocado after its been in the fridge for a little while (before its gets all black and squishy), dice it up and mix with 2 or 3 large spoonfuls of some also chilled Angry Salsa. Boom, done. If you are a glutton for punishment, add a couple more spoons of salsa to your liking. For those of you that are like me and are heavy handed on the spices when you cook, resist the urge to wanna add stuff to the mix. You'll end up jacking it up. Remember, Angry Salsa has all the stuff you'd wanna add already in there. The onion, the lime, the ginger, the sweet and the heat. This is meant to be easy!
Then just for a little mix up, throw in a handful of the shelled pistachios to round out the snack tray.
What do you need:
1 medium to large firm avocado
1 jar of Angry Salsa
1 fresh lime, cut into wedges
2 low-carb tortillas, cut into wedges
1 handful of shelled pistachios
