Let's get a little seafood-ish, shall we? This dish was bangin' and you've gotta try it!
Did a little spin on the typical Surf-n-Turf where there's steak and some sort of seafood. This here, my friend, is Surf and Turf-ish because there's SAUSAGE, SHRIMP, and SCALLOPS.
It's amazing to eat just by it self but you can definately put it over a bed of rice, potatoes, and for my keto-eaters, veggies/riced cauliflower (want a 'how to' make riced cauliflower? Let me know).
For those of you that cook like me, I don't measure sh*t out, so measurements below are approximate.
Let's get started!
What the hell do you need?
3 lbs Beef Smoked Sausage
3 lbs Shrimp
4 lbs Scallops
1 family size Tomato Soup
2 cups Ketchup
2 bottles Hawaiian Marinade
1/2 cup Lime juice
2 lbs Sweet peppers
2 large Onions
1 bunch Green Onions/Scallions
1 bulb Fresh Garlic
You can make a lot or a little with this recipe (I made a lot). You can also get whatever size shrimp, scallops as well as whatever type of sausage you like.
In stock pot, pour in a can of tomato soup (use as the can instructs, ex: if condensed, add water, etc.), ketchup, Hawaiian marinade, and some Angry Bear Sauce to taste.
Start simmering on low.
In a food processor, throw in the sweet peppers, onions, fresh garlic, and lime juice. Blend down pretty smooth. Add to pot and continue to simmer. Stir frequently to prevent from sticking to bottom of pot.
Slice up sausage and drop into pot. Continue slow simmer for about 20 mins. Let all that goodness cook out of the sausage.
Drop in the scallops, simmer about 5 more mins.
Drop in cooked shrimp, 5 more mins.
Remove from heat, a pot this large will continue cooking, so it's very important to remove from heat source to not over cook the seafood.
Serve alone as a soup or over rice, potatoes, or veggies as you wish.
Toss some chopped green onions and of course top off with Angry Bear Sauce.
